01. – Introduction
I was watching YouTube videos about two years ago and a suggested video caught my eye; oven roasted chili lime garbanzo beans. I decided I wanted to try the recipe, so I purchased a can of garbanzo beans from Wegmans and chili lime seasoning from Trader Joe’s.
I didn’t think much of the recipe and it definitely wasn’t better than popcorn in my opinion. I also didn’t like the chili lime seasoning I purchased from Trader Joe’s. The chili lime seasoning from Trader Joe’s was very bland. Any chili seasoning should have a little bit of a kick to it in my opinion.
Later, I was trying to come up with additional yogurt-based salad dressing recipes and I thought chili lime would be a good candidate. I purchased a bottle of ground cayenne pepper from Trader Joe’s.
After suffering a number of kidney stones in recent years, I decided to try drinking lime juice in the hope that doing so would dissolve any uric acid crystals before they morphed into a kidney stone. I saw a product called True Lime at Wegmans one time while shopping in the spice aisle, so I purchased a box. I ended up having to stop drinking lime juice because it negatively impacted my digestive system, so I still had quite a few packets remaining.
Following is the recipe I came up with to make creamy chili lime salad dressing that can also be used as a dip or baked potato topping.

Yield: 2/3 cup

- 2/3 cup whole fat Greek or regular yogurt
- level to heaping 1/4 tsp ground cayenne pepper
- 1 packet True Lime
- slightly less than 1/4 tsp sea salt

01) Add 2/3 cup whole fat Greek or regular yogurt to a small bowl.
02) Add the cayenne pepper, sea salt, and True Lime to the yogurt and stir thoroughly to combine.

One packet of True Lime is supposedly equal to the juice from one lime wedge. Therefore, you might be able to substitute the juice from one lime wedge for one packet of True Lime. However, I’ve never tried using actual lime juice, so I don’t know how well it would work.
This recipe yields enough salad dressing to adequately coat 10-oz of salad mix with 2/3 cup of add-ins; e.g. 1/3 cup of dried cranberries and 1/3 cup of pecan or walnut pieces.
As a baked potato topping, 2/3 cup might be too much for one baked potato, so you might be able to use the amount for two baked potatoes.
