Italian Omelette

1 – Introduction


In April 2023, I watched a recipe video on the Cooking Everyday YouTube channel. The video was titled 1 Tomato with 3 Eggs and is pretty much an omelette. I made the recipe later and the taste reminded me of eating pizza.

I don’t typically buy fresh tomatoes, so I didn’t want to have to run to the store to buy a tomato every time I wanted to make the recipe. Therefore, I came up with the idea of using ketchup, pasta sauce, or salsa as a replacement. I also came up with the idea of adding an herb blend that gave the recipe an Italian flavor. I modified the recipe a little bit more for my taste and the result was this recipe.

2 – Recipe


Yield: One Omelette

2.01 – Recipe – Ingredients


  • 3 eggs
  • 1/4 tsp salt, or to taste
  • 1/4 tsp black or white pepper, or to taste
  • 1/2 tsp Italian Seasoning herb blend
  • 1/3 cup ketchup, pasta sauce, or salsa (see Recipe – Notes)
  • 1/3 cup shredded cheese
  • Approximately 2 tsp – 1 Tbsp preferred cooking fat (optional if you’re using a non-stick fry pan)

2.02 – Recipe – Directions


01) Add preferred cooking fat, if using, to a 10-in or larger fry pan.
02) Pour 1/3 cup ketchup, pasta sauce, or salsa into a small dish and set aside.
03) Add eggs, Italian seasoning, pepper, and salt to a 1-quart measuring cup (see Recipe Notes) or mixing bowl.

04) Using a fork, beat the eggs and seasoning mixture to combine.

05) Heat the fry pan on medium low heat for two minutes.
06) Pour the egg and seasoning mixture into the fry pan; cooking time is approximately 10-11 minutes total.

07) Get the shredded cheese ready.
08) When the omelette becomes firm enough (about 3-4 minutes), sprinkle shredded cheese over the entire omelette surface.
09) Once the cheese has melted, add the ketchup, pasta sauce, or salsa in the middle of the omelette and spread with the back of a spoon.

10) Turn off the heat and fold a third of each side of the omelette into the middle.

11) Carefully slide the omelette onto a plate and enjoy.

2.03 – Recipe – Notes


I like to use a 1-quart measuring cup for this recipe because it’s easy to pour the contents into the fry pan.

Initially I used salsa when making this recipe, but this year I tried pasta sauce and I like the taste of the pasta sauce better.

I tried using ketchup for this recipe once, but I didn’t like it as well as pasta sauce or salsa.

To make this recipe low FODMAP, use sensitive pasta sauce or salsa (no garlic and no onion). FODY Food Company makes a low FODMAP pasta sauce and salsa. Rao’s Homemade also makes a sensitive pasta sauce.
